Savory Waffles

If you’re not a sweet breakfast person, what you need is Savory Waffles. These have been my go-to version for years. With sausage and cheese, they’re perfect on their own. But add a fried egg on top, and you can even serve these for lunch or dinner.

Turn simple ingredients into a satisfying breakfast, brunch, or dinner. And at our house, brinner is always a winner, so that’s where these savory waffles are most likely to show up.
I like to mix things up with these waffles, so don’t hesitate to make them your own. Add veggies like chopped spinach, a mix of herbs, use vegan sausage, and change up the cheese.
And after you enjoy the savory, if you want something sweet, you’ll love my whole wheat waffles or brioche french toast.

Variations on Savory Waffles
- Cheddar and Chive – skip the sausage and add chopped chives and a pinch of garlic powder
- Spinach and Feta – swap in chopped, cooked, and drained spinach (make sure it’s dry before you fold it int ot he batter) and crumbled feta
- Bacon and Cheddar – use chopped, cooked bacon instead of sausage
- sprinkle it on top
- Kimchi Waffles – chop and drain kimchi and use it instead of the sausage (keep the cheddar – the flavor is great with kimchi!)
- Sweet Potato and Sage – swap in roasted diced sweet potatoes and some sage cooked in butter
- Everything Bagel Waffles – add “everything-but-the-bagel” seasoning in the batter or

First, cook the sausage in a skillet, breaking it apart as it cooks. Transfer it to a paper towel-lined plate to drain.

Make a basic waffle batter recipe, but make it more savory. See the recipe below for my go-to that is both crispy and fluffy in the center. Stir in sausage and cheddar to the batter.

Cook the waffles in your waffle iron according to the machine’s instructions.
Serve them with a fried egg on top, or with a drizzle of maple syrup if you want a little sweet-savory mix.
What do they taste like?
These waffles contain savory breakfast goodness in every bite and remind me of a breakfast sandwich. They don’t need any syrup at all, but a light drizzle of maple syrup (if you’re so inclined) fits in pretty nicely.

Savory Waffles with Sausage and Cheddar
Equipment
- Skillet
- Mixing Bowl
- waffle iron
Ingredients
- 1 16-ounce package Breakfast Sausage
- 4 ounces Cheddar Cheese, grated
- 4 cups Waffle Batter, prepared (see note)
Optional Toppings:
- Fried Eggs
- Green Onions, chopped
- Maple Syrup
- Butter
Instructions
- Place a large skillet over medium heat. Add sausage and cook, breaking it apart with a wooden spoon, until golden brown and crisp, 5 to 7 minutes. Set sausage aside to cool for 5 minutes.
- Meanwhile, grate cheese and prepare waffle batter.
- Combine cheese and cooked sausage with waffle batter, stirring just until everything is evenly incorporated.
- Heat a waffle iron. Spray with nonstick cooking spray and pour batter into hot iron. Close and cook until waffles are cooked through and golden brown (this took 4-5 minutes in our iron; the waffles are usually done when they stop steaming).
- Serve waffles immediately with any (or all!) of the optional toppings.

Made this in Gluten free form. I added in a couple squirts of syrup to the batter and it tasted just like a McGriddle!!

Yum, this looks and sounds so amazing! It reminds me of this savory waffle I had at The Waffle Window in Portland – they made mine with vegan sausage, and it had cheese, jalapenos, and an avocado-tomatillo salsa that was absolutely amazing. ๐ I kinda want to get a waffle iron now, especially since yours doesn’t look like it takes up too much space!
