Love buffalo chicken, but don’t want to deal with the mess of wings? Try making these Buffalo Chicken Dip Bites. Flaky pastry filled with buffalo chicken dip and topped with melty cheese.They’re a great appetizer or game day snack, but make a fun meal with a crisp salad served on the side.

This recipe is part of my popular Instagram series Trader Joe’s in 20 where we stop at Trader Joe’s, pick up a few things, and make a quick and easy 20 minute dinner! And if you love spicy buffalo chicken, this is a must-try! It’s like dip and chips all in a bite-sized pastry cup. These are the perfect appetizer for a crowd or fun dinner.

All you need to serve on the side is a crisp green salad. If you’re already at Trader Joe’s grab a bagged Avocado Ranch Salad which is the perfect complement to the flavors of buffalo chicken. Or make your own crisp green salad – Italian House Salad, Fresh Corn, Tomato, and Avocado Salad, or Pizza Salad would be great.

Ingredients

All you need is five ingredients and you’re in Buffalo Chicken Bite heaven. 

  • Shredded Cooked Chicken – This is a great use for shredded leftover chicken. Or, grab Trader Joe’s Hardwood Smoked Pulled Chicken which just needs to be warmed up and shredded with forks to use. 
  • Buffalo Style Chicken Dip – This creamy dip is the filling for the bites. Stir some extra chicken into it to make it a bit more hearty and filling. You can make your own if you prefer – I love this recipe
  • Canned Crescent Rolls – These make the base of the bites. Super flaky and easy to use. You’ll fill each cup in the muffin tin with one crescent roll.
  • Mozzarella Cheese – Top each bite with shredded cheese. I like mozzarella, but any type of cheddar or a blend of cheeses will work. 
  • Green Onions – I love a pop of color on these bites, and green onions add a bit of fresh flavor at the same time. Chives or chopped parsley would be great as well.

How to Serve Them

I’m not sure there’s ever a wrong way to serve flaky Buffalo Chicken Dip Bites, but these are practically begging to be set out for your next game day. Serve them on a platter alongside carrot and celery sticks and blue cheese or ranch dressing for dipping. 

We have been making these for lunch or dinner as well. Served with a green salad or veggie sticks on the side, they’re filling and fun, and come together super fast. They even pack up and can be reheated, so they’re a good meal prep or packed-lunch idea.

Buffalo Chicken Dip Bites

Love buffalo chicken, but don’t want to deal with the mess of wings? Try making these Buffalo Chicken Dip Bites. Flaky pastry filled with buffalo chicken dip and topped with melty cheese. Serve with celery and carrot sticks or a fresh green salad.

Equipment

  • Mixing Bowl
  • Muffin Tin

Ingredients 

  • 1 cup shredded cooked chicken, like Trader Joe's Hardwood Smoked Pulled Chicken
  • 12 ounces Buffalo Style Chicken Dip
  • 2 8 ounce rolls Refrigerated Crescent Rolls
  • 1 cup shredded mozzarella cheese
  • 3 green onions chopped, for serving

Instructions 

  • Preheat the oven to 350 degrees fahrenheit. Reheat the chicken according to package directions and then shred it with two forks. In a medium mixing bowl combine the chicken and the dip. Spray a muffin tin with non-stick cooking spray.
  • Working with one crescent roll at a time, press the rolls evenly into the muffin tin. Fill the rolls with the chicken mixture. Top with cheese. Bake until golden and bubbly, 13-15 mins. Top with green onions and serve warm.
