Broccoli and Cheese Sliders

- 10 ounces broccoli florets (or 2 small heads of broccoli)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 4 tablespoons butter
- 1 tablespoon Dijon mustard (any kind works; I used sweet hot mustard here)
- 1 teaspoon Worcestershire sauce
- 1 pack Hawaiian roll sliders (16 connected slider rolls)
- 8 slices cheese (Colby Jack or cheddar)
- Few shakes Everything but the Bagel Seasoning (sub poppyseeds)
Preheat the oven to 425°F.
Prep the broccoli by chopping it into bite-sized florets. I like these to be fairly small, so even if you're using pre-chopped broccoli, chop any large pieces down a bit.
Spread the broccoli out on a sheet pan, drizzle with the olive oil and salt, and stir to combine. Roast, stirring halfway through cooking, until the broccoli is very tender, 15 to 20 minutes.
Meanwhile, make the topping by melting the butter and whisking in the mustard and the Worcestershire sauce. Set aside.
Set the Hawaiian rolls out on a cutting board and slice horizontally to separate the top from the bottom (don't separate the individual rolls).
Put the bottom portion of the rolls in a square baking dish, cut-side up. Top with 4 slices of cheese, the roasted broccoli, 4 more slices of cheese, and the top of the rolls, pressing down gently.
Drizzle the butter sauce evenly over the top of the rolls. Sprinkle with Everything but the Bagel seasoning. Cover tightly with foil.
Reduce the oven to 350°F and bake the rolls, covered, for 25 minutes.
Remove the foil and continue baking, uncovered, until the top of the rolls are golden brown, about 5 minutes more.
