Marshmallow Cornflake Treats

- 6 cups cornflakes
- 3 tablespoons unsalted butter
- 2 10 ounce bags mini marshmallows, divided
- 1/2 cup nonpareil sprinkles, divided
Line a 9x13 inch baking pan with parchment paper.
Pour the cornflakes into a large mixing bowl.
In a heavy-bottomed saucepan over medium heat, melt the butter. Add one 10-ounce bag of mini marshmallows and stir until completely smooth and melted. As soon as the marshmallows are melted, pour them over the cornflakes.
Gently stir together the cornflakes and marshmallows until evenly combined. Next add the remaining 10-ounce bag of marshmallows and 5 tablespoons of nonpareils and fold everything together until even.
Spread the cornflakes out into the prepared baking pan, pressing firmly down on the top to create a flat surface. (Note: You can use an extra piece of parchment paper to press down on the top to make the surface flat.)
Sprinkle the remaining sprinkles over the top of the treats. Let them cool completely at room temperature.
When cooled, slice into squares and serve!
These marshmallow treats are sticky! To help minimize sticking, you can spray the spoon you use to stir them and the knife you use to cut them with nonstick cooking spray first.
Make-Ahead Tips
These are best if served the same day they’re made when they’re the most crunchy. They can be stored at room temperature in a well-sealed container for up to 3 days but will soften a bit as they sit. Alternatively, to help them maintain as much crunch as possible, slice them into individual portions and then freeze them in a well-sealed container. Just let them come to room temperature before serving.
