Lemon Vinaigrette
So bright and refreshing, lemon vinaigrette is an easy way to bring tangy, fresh flavor to your favorite salads. This vinaigrette is balanced with a lightly sweet flavor to balance the sour. Feel free to adjust it to taste, adding more honey if you'd like it more sweet.

- 3 tablespoons fresh lemon juice (from 2 medium lemons)
- 2 teaspoons honey (see note)
- 2 teaspoons Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 cup olive oil
In a small bowl whisk together the lemon juice, honey, mustard, and salt. Add the olive oil while whisking. (Alternatively, you can combine all of the vinaigrette ingredients in a jar with a tightly fitting lid and shake until smooth.)
Store lemon vinaigrette in the refrigerator for up to 5 days.
Honey - Feel free to substitute maple syrup or agave here. Adjust the sweetness to taste, adding some additional sweetner if you'd like.
