Hummus Bowls (Trader Joe's recipe)

Hummus bowls are flavorful Mediterranean-inspired bowls with layers of flavor and color. This version uses a few Trader Joe’s shortcut ingredients like bagged salad and frozen proteins to keep the prep time super fast.

Ingredients

  • 2 bags Frozen Beef Kebabs OR for a vegetarian version, grab frozen falafel
  • 1 Lemony Arugula Basil Salad Kit
  • 1 16-ounce container hummus
  • 1 package Feta, Pepper Drop, and Olive Antipasto (see note)
  • 1 4-round package pita bread or Indian flatbread (optional)

Instructions

  • Prepare the kebabs or falafel according to package directions.
  • When the kebabs or falafel are nearly finished cooking, prep the salad according to package directions (I typically don't use all of the dressing since this recipe has lots of other saucy elements).
  • Set out 4 serving bowls and divide the hummus between the bowls. Spread the hummus out in a thin layer in each bowl.
  • Top the hummus with the salad, the kebabs or falafel and the spoon the antipasto mix over everything.
  • Serve with warm pita bread or flatbread.

Notes

Trader Joe’s Feta, Pepper Drop, and Olive Antipasto is a seasonal topping that is featured in these photos. If it's not available when you're making this recipe try any combination of these:
  • crumbled feta
  • cherry tomatoes, halved
  • Tzatziki yogurt dip
  • diced fresh cucumbers
