Equipment

  • Mixing Bowls
  • Whisk
  • Griddle or Large Nonstick Pan

Ingredients

  • 1 loaf banana bread, cut into 8 thick slices
  • 3 large eggs
  • 3/4 cup milk
  • 1 teaspoon sugar
  • 1/4 teaspoon ground cinnamon
  • Salted butter, for greasing the pan
  • Fresh bananas and maple syrup, for serving

Instructions

  • In a large bowl, whisk together the eggs until frothy. Add milk, sugar, and ground cinnamon until even.
  • Heat a griddle or large nonstick skillet to low-medium heat.
  • When the griddle is hot, grease it generously with butter. Working with one slice of banana bread at once (and supporting it on both sides with forks so that it doesn’t fall apart in the custard), dip it in the custard. Let the excess custard drip off and then transfer the banana bread to the hot griddle. Cook the French toast on both sides until golden brown, about 3 minutes per side.
  • Serve warm with fresh bananas and maple syrup on top.
