Green Goddess Chicken Salad (Trader Joe's shortcut recipe)

Chicken salad is classic and always a hit for lunch, but what if we give it a twist? This Green Goddess Chicken Salad combines the convenience of pre-cooked chicken with the zesty kick of Trader Joe’s Zhoug Sauce and creamy mayo to bring it all together.

Ingredients

  • 1 16-ounce package Hardwood Smoked Pulled Chicken
  • 1/2 cup Trader Joe’s Zhoug Sauce (see note)
  • 1/3 cup mayonnaise
  • 2 lemons or limes
  • 1/2 cup almonds, roughly chopped (I like flavored ones like Garlic and Black pepper or Smoked)
  • 16 large romaine lettuce leaves (if you want to serve these as lettuce wraps)

Instructions

  • Warm up the chicken according to the package instructions. Once heated through, shred it with two forks and let it cool slightly.
  • Add the Zhoug sauce and mayo. Stir until combined.
  • Serve immediately or refrigerate, well-covered, for up to 3 days.
  • Just before serving, squeeze some lemon or lime juice over top and top with chopped almonds.

Notes

Zhoug sauce - This is spicy! If you want to skip the spice, try using with Vegan, Kale, Cashew and Basil Pesto or classic pesto or Chimichurri Sauce.
