Parmesan-Kale Hash Brown Waffles

- 2 Baking Potatoes (about 1 pound total)
- 1/4 cup Shredded Parmesan
- 2 large leaves Kale, very finely chopped
- 1 tsp Salt
- 1 tsp Black Pepper
- Nonstick cooking spray
Preheat waffle iron on medium-high.
Shred potatoes with a box grater or in a food processor. Squeeze the shredded potatoes in clean, dry dish towel to remove as much liquid as possible (this is key to getting crispy potatoes). Toss potatoes with parmesan, kale, salt and pepper.
Spray the waffle iron generously with nonstick cooking spray. Pile the potato mix on the waffle iron and press to close. Cook until the hash browns are golden brown on both sides, 6 to 8 minutes.
