Step 1:
Heat a Dutch oven. Add olive oil and onion and bell peppers.
Cook until onions are deep golden brown. Add garlic and Moroccan seasoning and saute until fragrant, about 2 minutes.
Step 2:
Pour in crushed tomatoes, stock, and bay leaf. Bring to a simmer.
Stir in potatoes and lentils. Cover pot and simmer until both potatoes and lentils are tender.
