Roasted spiced chickpeas are somewhat of a fixture in this kitchen. They show up many forms, and we never get sick of them. So a few weeks ago when I realized that it was time to “harvest” the bunch of lettuce that I had been growing in the window of our apartment, I knew that the addition of a few of our favorite things (namely, spiced chickpeas and avocado) were the perfect way to extend my
paltry healthy handful of greens.
This is one of those salads with enough flavor and substance to be a meal on its own. As usual, the peppy chickpeas barely made it into the salad before we had devoured them straight out of the pan.
