Give your weekend waffles a make-over by adding savory sausage and cheddar cheese. Drizzled with maple syrup or topped with a fried egg, these savory waffles are sure to be a new favorite!

We pulled out the waffle maker to start testing these light and fluffy, savory waffles filled with crisp bits of sausage and melted cheddar.

To say our household is ready for spring would be an understatement. In February, Frank got hopeful and did all the maintenance on our bikes. I went through a stack of seed catalogs and sketched out a garden for our small backyard.

We’ve got promising seedlings growing in the basement and, during an ambitious warm stretch in late February, even planted some radishes and kale outdoors.

But, as it tends to do in Kansas City in March, the temps plunged back below freezing, covered our seeds with a layer of snow and ice, and sent us back indoors.

Making Savory Waffles with Sausage and Cheddar

Until conditions improve, we’ll be keeping warm in the kitchen in the best way we know how. With a skillet full of crisp, fragrant cooked sausage.

We’ll fire up our little waffle maker and breath in the warm steam that rises as those golden beauties cook.

We’ll stack the waffles two high and top them with fried eggs and a drizzle of maple syrup.

And smile between bites of savory, sweet breakfast goodness. While we keep waiting for spring to arrive.

Because, if you’ve never had waffles that lean towards savory instead of sweet, you’re missing out. Trust me. These waffles contain savory breakfast goodness in every bite and remind me of a breakfast sandwich if all the elements were mixed together. They don’t need any syrup at all, but a light drizzle of maple syrup (if you’re so inclined) fits in pretty nicely.

Savory Waffles with Sausage and Cheddar

Give your weekend waffles a make-over by adding savory sausage and cheddar cheese. Drizzled with maple syrup or topped with a fried egg, these waffles are sure to be a new favorite!

Equipment

  • Skillet
  • Mixing Bowl
  • waffle iron

Ingredients 

  • 1 16 oz package Breakfast Sausage
  • 4 oz Cheddar Cheese, grated
  • 4 cups Waffle Batter, prepared (see note)

Optional Toppings:

  • Fried Eggs
  • Green Onions, chopped
  • Maple Syrup
  • Butter

Instructions 

  • Place a large skillet over medium heat. Add sausage and cook, breaking it apart with a wooden spoon, until golden brown and crisp, 5 to 7 minutes. Set sausage aside to cool for 5 minutes.
  • Meanwhile, grate cheese and prepare waffle batter.
  • Combine cheese and cooked sausage with waffle batter, stirring just until everything is evenly incorporated.
  • Heat a waffle iron. Spray with nonstick cooking spray and pour batter into hot iron. Close and cook until waffles are cooked through and golden brown (this took 4-5 minutes in our iron; the waffles are usually done when they stop steaming).
  • Serve waffles immediately with any (or all!) of the optional toppings.

Notes

No need to worry about having exactly 4 cups of batter – a little more or less will work just fine. Any waffle recipe will work, so use your favorite. Ideally look for a recipe that uses less than 3 Tablespoons of sugar so the savory flavors don’t get overshadowed. Simple Homemade Waffles from Epicurious will make just the right amount of batter or save yourself some time and grab your favorite store-bought waffle mix.

  1. Yum, this looks and sounds so amazing! It reminds me of this savory waffle I had at The Waffle Window in Portland – they made mine with vegan sausage, and it had cheese, jalapenos, and an avocado-tomatillo salsa that was absolutely amazing. 🙂 I kinda want to get a waffle iron now, especially since yours doesn’t look like it takes up too much space!
