Tex Mex Pizzas are what you get when tacos meet pizza in a weeknight dinner that can be on the table in about 20 minutes. We love to customize these, so set out your favorite taco toppings and let everyone assemble their own!

I’ve been all kids of excited to share these Tex Mex Pizzas with you. Not because they’re some complex well-kept recipe secret, but because they are precisely the opposite. These “pizzas” are what you get when you combine a few kitchen staples into something completely new. You can make them without measuring a thing or hovering over the stove.

You can even make these “pizzas” with two toddlers tugging at your legs during the short 20 minutes it takes to prepare them.

Taco + Pizza = Dinner Love

To make these tacos-turned pizzas you really just need your favorite taco toppings. Toast some pita or naan until it’s starting to get crisp. Then top it with meat or beans (or both) and cheese. Toast again until the cheese is melty and the crust is golden brown. Then get wild with the toppings or keep them super simple.

You can make these for one person or for many people and have everyone customize their own.

Even the leg-tugging toddlers can get in on the action of assembling them.

Optional Toppings

Top these Mexican Pizza Pitas with anything you’d like, but here are our favorites. We like to put them out taco-bar style so that everyone can add their favorites at the table:

Tex Mex Pita Pizzas

Equipment

  • Half Sheet Pan

Ingredients 

  • 4 rounds Pita or Naan (or 1 pre-cooked pizza dough)
  • 1 can Refried Beans
  • 5 oz Shredded Cheese, Mexican Blend

Optional Toppings:

  • Shredded Lettuce
  • Salsa
  • Guacamole / Sliced Avocados
  • Black Olives
  • Jalapenos
  • Tomatoes
  • Green Onions
  • Sour Cream

Instructions 

  • Turn on the oven’s broiler (I like to use the lowest setting so that things don’t burn if I get distracted for a moment).
  • While the oven heats, prep and set out any toppings you’d like for the pizzas.
  • Place pita or naan on a sheet pan. Slice sheet pan under the broiler and toast bread on both sides until crisp. (This should just take a minute or two on each side, but will help the bread from turning too soggy when you add toppings.)
  • Spread beans on bread and top with cheese. Return to the broiler and broil until cheese is melted.
  • Pile on any of the toppings you’d like and slice into wedges. Serve warm with some extra salsa or sour cream at the table.

    Fab !!!! Healthy easy pizza’s made with your favourite choice of toppings. Better than a frozen pizza !! I think pepperoni on top was lovely too!
