Watermelon Lime Coolers use fresh watermelon, lime juice, mint and sparkling water for a refreshing drink that’s perfect for hot weather!

And truly, it couldn’t be easier to make a batch of these drinks to serve for a crowd. Last week we had friends over for dinner. Four energetic kiddos ran laps around the dinner table while the adults talked until well past our two year olds’ bedtime.

But we started the evening on the back deck where Molly and Clara showed off our patio garden.

They are becoming excellent little gardeners, though they call everything “basil.”  Here’s Molly, trying to convince us that this is world’s tallest basil plant.

Watermelon Lime Coolers

And while the girls gave everyone a tour of the backyard, I threw watermelon cubes and lime juice in the blender to create this gorgeous pink puree.

Then I pulsed in a few leaves of mint, poured it into ice-filled glasses, and topped it with spring water to make Watermelon Lime Coolers.

If temps have been soaring where you live, as they have been here in Kansas City, grab yourself a big old watermelon and toss it in the blender. We’ll meet you out on the deck for some Watermelon Lime Coolers!

Watermelon Lime Cooler

Make a pitcher of these refreshing watermelon lime coolers to serve on hot summer evenings. Want to turn it into an easy cocktail? Just add a shot of vodka, rum or tequila!
Prep: 15 minutes
Total: 15 minutes
Servings: 6 servings

Equipment

  • Blender

Ingredients 

  • 10 cups Seedless Watermelon cubes (about 1 small watermelon)
  • 2 Tbsp Fresh Lime Juice
  • 2 Tbsp Sugar (more or less, to taste)
  • 1/2 cup Mint Leaves
  • 3 cups Sparkling Water
  • For Garnish: Watermelon slices and extra lime leaves (optional)

Instructions 

  • About 1 hour before serving, cube watermelon and freeze. (Using very cold / nearly frozen watermelon cubes is what gives this cooler a thicker texture and keeps it very cold while serving.)
  • Combine chilled watermelon cubes, lime juice, sugar and mint leaves in a blender. Blend until smooth. Taste and add additional sugar if you'd like it sweeter.
  • Note: At this point you can refrigerate the watermelon puree for up to 3 hours.
  • Assemble coolers by filling 6 serving glasses with ice. Add watermelon puree to fill the glasses halfway. Add sparkling water to fill.
  • Garnish with watermelon wedges and extra mint leaves if you'd like!
